HEAD CHEF
Reports to F&B Manager.
The head chef leads the kitchen team, managers food preparation, ensuring high quality dishes, and maintains hygiene and safety standards.
Key Responsibilities:
- Kitchen management: Oversee daily kitchen operations, Coordinate food preparation and service, Ensure consistency in taste, presentation, and portion sizes
- Menu planning and development: Design an update menus, Create new recipes and seasonal dishes, Consider customer preferences and food trends
- Staff supervision: Train, mentor and manage kitchen staff, Schedule shifts and delegate tasks, Maintain discipline and teamwork in the kitchen
- Quality Control: Ensure all dishes meet high standards, Monitor food freshness and storage, Handle customer feedback related to food
- Cost control and inventory: Manage food costs and minimize waste, Order supplies and manage stock levels, Work within budget constraints
- Health and safety compliance: Ensure compliance with food safety regulations, Maintain cleanliness and sanitation standards, Enform proper kitchen procedures

CONFERENCE & EVENTS MANAGER
Reports to: Clubhouse Manager
The conference and events manager plans, coordinates and delivers events such as conferences meetings exhibitions and corporate functions. The role focuses on ensuring events are executed smoothly, meet client expectations and stay within budget.
Key Responsibilities
- Plan, organize and manage events from start to finish
- Liaise with clients to understand requirements and objectives
- Source and coordinate venues, suppliers, and service providers
- Develop event schedules, layouts and operational plans
- Manage even budgets and negotiate supplier contracts
- Oversee logistics including catering, audiovisuals and decor
- Supervise staff and coordinate on site event operations
- Ensure compliance with health, safety and legal regulations
- Handle issues or emergencies during events efficiently
- Conduct post event evaluations and prepare reports

F&B Stock Clerk
Reports to Stock Controller.
Responsible for maintaining and counting inventory, receiving, packing, organizing and issuing stock, ensuring products are stored and recorded accurately. Helping to maintain efficient stock levels and support smooth operations within the Clubhouse house and surrounding F&B service areas.
Key Performance Indicators: Stock Control and attention to detail and health and hygiene compliancy.
Duties and Responsibilities
- Inventory Counting: Manage and monitor stock levels across the Bar, Kitchen, and Halfway House. Investigate and reconcile stock variances daily. Daily, weekly and monthly stock counts.
- Receiving Stock: Receiving and verification of deliveries. Ensure all supplier documentation is complete and accurate. Ensuring food and beverage quality of stock.
- Packing and Organising: Following FIFO at all times, checking expiry dates. Communicating shelf life / expiry dates with direct report. Provide audit reports as required.
- Issuing of Stock: Issuing stock to kitchen and bars while following par levels. Using appropriate and accurate documentation for issuing stock

MAINTENANCE WORKER: PAINTER
Reports to: Maintenance Manager
Key Performance Indicators:

- Maintenance

Painting
- To paint all interior and exterior buildings of LCE;
- To apply various finishes to buildings, rooms, and other structures, including primers or sealers;
- Prepare, clean and tape all job sites;
- Remove old paint coating where necessary;
- Fill cracks, holes, and joints by using the correct materials;
- Ensure touch-ups are done as and when required;
- Ensure that a wet paint sign is always up where required
Maintenance
- Carry out all maintenance tasks as and when required;
- Inspect all buildings, grounds and equipment for any maintenance required;
- Assist in installing appliances and equipment as required;
- Ensure that all lights are working at all times;
- Inspect and maintain all machinery and equipment;
- Parking, courtyard and bin area to be cleaned at all times;
- High pressure (once a month) and clean the HWH forecourt and Patio area daily;
- Ensure litter around clubhouse and other facilities are cleaned at all times;
- Fat traps to be cleaned weekly;
- All vents from ceilings and kitchens to be taken out and must be cleaned by the scullery team once a month;
- All Clubhouse and Conference high windows to be cleaned once a week;
- Check regularly for loose paving around all facilities;
- Ensure all maintenance tasks in lodges are completed timeously;
- Ensure all checklists are completed in full
General
- Ensure all tasks are completed in a timely manner;
- Ensure your working area is neat and tidy at all times;
- Adhere to instructions from management at all times;
- Maintain hight standard and best quality of work;
- Be flexible and assist in other departments as required from time to time;
- Ensure that all health and safety requirements are adhered to at all times;
- To be punctual at all times;
